I use the ripper tactic you described. I run a wall of 5-10 in front of my devilgaunts or hormagants etc and due to interveining models my real troops get a 4+ cover save. I also use the venomthropes to give the rippers a 4+ cover save (because of stealth). If the enemy wastes a ton of shots at the rippers that means they aren't shooting at something else and they might waste Str 6-8 shots on them to auto kill a base. Don't be afraid to go to ground either and make the cover save 3+. Lastly they can tarpit some units well. I recently had one squad of 8ish hold up a chaos dreadnought for about 3 turns, it would kill 1-2, I would lose another 1 to failed fearless saves but it meant I could ignore it for the remainder of the game.
Not the best unit at all but I do think they have a use in a foot slogging nid army.
Regarding Uzi-Rippers (Rippers w/ Spinefists, thanks for the mental image btw). When I first started playing and had nothing else I ran a group of rippers with spinefists. Their shining moment that I have mentioned a LOT around here because it's just that funny: killing off Terminators.

Short answer: Now we test play and see how much things have changed.
It think things have changed a lot for the nids actually. Also if the rumor is true and forgeworld is being brought into the regular 40k game, that will definitely change a few things.
